French Vegetable Casserole - cooking recipe
Ingredients

1 red pepper
1 green pepper
1 yellow onion
2 zucchini
1/2 eggplant
4 tomatoes or 1 can 14 1/2 oz. crushed tomatoes
2 Tbsp. olive oil
1 - 2 cloves garlic minced
1 sprig dried or fresh thyme
1 tsp. basil leaves
1 Tbsp. chopped parsley
salt & pepper
Preparation

Dress peppers and cut in slices - peel onion cut into wedges. Peel and cut eggplant and zucchini into cubes or slices.
Peel tomatoes cut into wedges.
In skillet saute pepper and onion in the olive oil until soft.
Add eggplant and tomatoes.
Add minced garlic, thyme and basil.
Sprinkle with parsley.
Cover.
Cook over medium - low heat for 30 minutes.
Season with salt and pepper.
