Fish Poached In Milk - cooking recipe

Ingredients
    1 lb. fish fillets
    1 c. milk (whole)
    2 Tbsp. butter
    2 Tbsp. flour
    1/8 tsp. pepper
    1 tsp. lemon juice
    2 Tbsp. chives, chopped
    pinch of salt
Preparation
    Heat milk in shallow pan until almost boiling, then add fish and simmer fish until flaky to fork.
    Remove from heat.
    Carefully transfer fish to a heated platter and keep warm.
    Reserve the milk.
