German Potato Salad - cooking recipe
Ingredients

3 lb. potatoes
1/4 lb. bacon
1/2 c. sugar
1/4 c. flour
1 Tbsp. salt
1/8 tsp. pepper
1/4 c. vinegar
1 c. water
1/2 c. chopped celery
1/4 c. chopped onion
1/4 c. chopped green pepper
4 hard-boiled eggs, sliced
1 large (4 oz.) can pimentos, sliced
Preparation

I boil potatoes with jackets on.
Pare and boil potatoes until done, but firm.
Cool.
Cut bacon into small pieces and fry until crisp.
Remove bacon and fat from pan.
Place 1/4 cup bacon fat in the pan.
Stir in sugar, flour, salt and pepper.
Add vinegar and water.
Cook until thick, about 5 minutes.
Slice cool potatoes and combine with bacon, celery, onion, green pepper, eggs and pimentos.
Pour dressing over potato mixture and mix lightly. Place in casserole.
Serve warm.
Serves 10 to 12.
