Ricotta Pineapple Muffins - cooking recipe

Ingredients
    1 egg
    oil
    1 1/2 c. Ricotta cheese
    1 c. crushed, well-drained pineapple
    2 c. all-purpose flour
    1/2 c. sugar
    1 Tbsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
Preparation
    In a measuring cup, place the egg and add enough oil to make 1/2 cup.
    Add the egg and oil mixture to the Ricotta cheese and mix until smooth.
    Add the crushed pineapple.
    In a separate bowl, combine the dry ingredients and blend gently.
    Fill greased muffin cups 2/3 full.
    Bake in a 400\u00b0 oven for 25 minutes.
    Makes 1 dozen muffins.
