Ingredients

2 c. buttermilk
2 eggs
1 1/2 c. flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 Tbsp. oil
Preparation

Beat eggs first.
Then add ingredients in any order you want. Final batter should be smooth and creamy.
If you want to thin, add small amounts of regular milk (2% or low-fat is all right) and beat to desired consistency.
Oil and heat hot skillet to 350\u00b0. Place some batter in pan and flip when golden brown on bottom. Yields 12 to 15 (4-inch) pancakes.
Works best in non-Teflon electric frypan.
