Chicken Salad - cooking recipe

Ingredients
    1 qt. diced chicken, cooked
    2 to 3 c. diced celery
    1/2 c. minced onions
    1/2 c. fresh chopped parsley
    salt to taste
    pepper to taste
    juice of 1/2 to 1 lemon
    4 or more Tbsp. olive oil or vegetable oil
    2 or more c. mayonnaise
Preparation
    Bring chicken to a gentle boil.
    Cover and simmer for 1 to 2 hours or until chicken is tender.
    Drain and dice up.
