Carrot Casserole - cooking recipe

Ingredients
    1 lb. scraped carrots, sliced in circles
    1 small onion, chopped
    2 stalks celery, chopped
    1 can mushroom soup
    1 stick light margarine
    1/2 bell pepper, chopped (optional)
    Ritz cracker crumbs
Preparation
    Cook carrots in salted water until tender; drain.
    Saute onions, celery and bell pepper in margarine until tender.
    Mix all ingredients, except cracker crumbs, together and put into baking dish.
    Top with cracker crumbs and bake at 350\u00b0 for 30 minutes. Serves 4 to 6.
