Cajun Roast - cooking recipe

Ingredients
    beef roast (tender cut)
    garlic toes
    green onion
    salt
    cayenne pepper
    black pepper
    white pepper
    paprika
    Italian seasoning
    butter or margarine, softened
    Dijon mustard
Preparation
    Make small slits in roast (over all sides of roast).
    Stuff into each small pocket a sliver of garlic and a piece of green onion.
    Rub butter over roast, then rub Dijon mustard over roast (all sides).
    Sprinkle spices over roast, then pat down.
    Bake in 500\u00b0 oven uncovered for 15 minutes.
    Then bake in 325\u00b0 oven, covered, for 1 to 1 1/2 hours, depending on size of roast and cut of meat.
