Pizza Rice Salad - cooking recipe

Ingredients
    1 1/2 c. Minute rice, uncooked
    1 c. Mozzarella cheese, shredded
    3/4 c. sliced pepperoni, halved
    1 large tomato, diced
    2 c. sliced vegetables (mushrooms, green pepper, ripe olives, green onion)
    1 c. Italian salad dressing
Preparation
    Prepare rice as directed on package; cool.
    Toss rice with remaining ingredients in a large bowl; use 1/2 cup salad dressing. Chill. Just before serving, add remaining salad dressing. Sprinkle with Parmesan cheese.
