Shrimp And Orzo Salad - cooking recipe
Ingredients

1/3 c. red wine vinegar
1 tsp. dried basil
1 tsp. olive oil
1/2 tsp. salt
1/2 tsp. dried oregano
1/4 tsp. pepper
1 c. uncooked orzo
2 c. seeded, diced tomatoes
1 c. frozen green peas, thawed
1/2 c. finely chopped purple onion
1/4 c. chopped fresh parsley
1 lb. medium shrimp, cooked and peeled
Boston lettuce leaves (optional)
Preparation

Combine first 6 ingredients in a large bowl.
Stir well and set aside.
Cook orzo and drain well.
Add orzo, tomato and next 4 ingredients to vinegar mixture.
Toss well.
Cover and chill. Serve in lettuce-lined bowl.
Makes 4 (1 1/2 cup) servings.
