Southern Chicken Casserole - cooking recipe

Ingredients
    1 frying chicken, cut up or use favorite pieces
    1/2 lb. bacon
    1 large onion, sliced
    1 tsp. salt
    1/2 c. chopped green onions
    4 medium potatoes, pared
    1 tsp. poultry seasoning
    1/2 tsp. pepper
    2 Tbsp. parsley flakes
    2 c. green beans, broccoli, squash, cauliflower or carrots (optional)
Preparation
    In a skillet, fry bacon until crisp and remove.
    Add chicken, browning well on all sides.
    Remove to a 2-quart casserole dish as pieces brown.
    Add vegetables, if desired, on top of chicken.
    Cut potatoes into slices or chunks.
    Add to bacon fat and brown. Remove.
    Add as next layer in the casserole dish.
    Top potatoes with onions.
    Sprinkle with seasoning, salt, pepper, green onions and parsley.
    Top with bacon.
    Cover and bake at 350\u00b0 for 45 to 50 minutes.
    Serves 4.
