Vermicelli In Ricotta Sauce - cooking recipe

Ingredients
    1 clove garlic, minced
    2 Tbsp. unsalted butter
    2 Tbsp. olive oil
    1/3 c. milk
    1/3 c. heavy cream
    1 tsp. salt
    1/8 tsp. each: crushed red pepper and black pepper
    1 lb. partially skimmed Ricotta
    1/2 c. Parmesan
    1/4 c. Parmesan (garnish)
    1 Tbsp. minced parsley (garnish)
Preparation
    Cook garlic in butter and olive oil for 1 minute over moderately low heat.
    Add milk, cream, salt, red pepper and black pepper Bring to a simmer (not boil).
    Remove pan from heat.
    Add Ricotta and 1/2 cup Parmesan cheese.
    Whisk until smooth.
    Cook over moderately low heat until heated through.
    Toss sauce with vermicelli and garnish.
