Zucchini Patties - cooking recipe

Ingredients
    2/3 c. Bisquick baking mix
    1/4 c. Parmesan cheese
    2 eggs
    2 c. grated zucchini
    1 small chopped onion
    salt and pepper
Preparation
    Combine the ingredients and drop by spoonfuls into a heavy skillet containing a thin layer of hot oleo.
    Spread out and flatten as you turn them with a spatula.
    Fry until golden brown on both sides.
    I have used a little canola oil for frying.
