Garlic-Oregano Lamb With Vegetables - Skewered - cooking recipe

Ingredients
    1/4 c. plain low-fat yogurt
    2 Tbsp. chopped fresh oregano
    2 cloves garlic, minced
    2 lb. lean lamb (shoulder or leg), cut into 2-inch cubes
    12 shallots, peeled
    18 shiitake mushrooms, stems removed
    1 large red bell pepper, cut into 1-inch pieces
    1 medium zucchini, sliced crosswise 1/4-inch thick
    1 large lemon, sliced crosswise into 12 slices
    1/4 c. extra virgin olive oil
    1 1/2 tsp. salt
    1 1/2 tsp. freshly ground black pepper
Preparation
    In a large bowl, mix the yogurt, oregano and garlic. Add the lamb cubes and stir to coat the meat well. Cover and refrigerate overnight.
