Eggplant "Stuff" - cooking recipe

Ingredients
    1 medium eggplant
    1 c. seasoned bread crumbs
    2 eggs
    1 Tbsp. basil
    1 tsp. garlic
    1/2 c. Parmesan cheese
    3 tomatoes, sliced
    1 lb. sliced mushrooms
    1 (16 oz.) pkg. Mozzarella cheese, shredded
Preparation
    Peel
    eggplant; cut in 1-inch chunks.
    Boil in slightly salted water
    until
    transparent.
    Drain.
    In large bowl fork blend 2 eggs.
    Add drained eggplant and mix to coat eggplant. Add 1
    cup bread crumbs, herbs and mix.
    In a bread tin layer eggplant,
    top with a layer of sliced mushrooms, tomatoes and cheese.
    Repeat layers
    (eggplant,\tmushrooms,
    tomatoes
    and cheese).
    Bake covered
    at
    350\u00b0 for 20 minutes.
    Uncover and bake an additional 10 to 15 minutes.
    Slice using a spatula.
