Ingredients

eye of round roast
salt
pepper

Preparation

Let roast stand outside the refrigerator until it reaches room temperature.
Sprinkle with salt and pepper.
Preheat oven to 500\u00b0 and bake 5 minutes per pound.
Turn oven off and do not open oven door for 2 hours.
Roast will be pink.
