Fat-Free Carrot Cake - cooking recipe

Ingredients
    3 c. cake flour
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. nutmeg
    1/2 tsp. salt
    1 (16 oz.) can pear halves (unsweetened), drained and pureed
    1 1/4 c. brown sugar
    3 egg whites
    1 Tbsp. grated orange rind
    2 c. shredded carrots
    3 Tbsp. orange juice
    1 c. fresh strawberries
    1 tsp. confectioners sugar
Preparation
    In a large bowl, combine flour, baking powder, soda, cinnamon, nutmeg and salt.
    Puree pears; beat with brown sugar and egg whites.
    Add to flour mixture with orange rind and orange juice, until just moist.
    Don't overbeat.
    Fold in chopped strawberries and shredded carrots.
