California Meat Loaf - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 large onion, chopped
    1 1/2 tsp. salt
    1 1/2 tsp. oregano
    1 tsp. cumin
    1 tsp. coriander
    1/2 tsp. cinnamon
    1/2 tsp. ground cloves
    1/4 tsp. pepper
    pinch of cardamon
    1 lb. ground beef
    1/2 lb. ground pork
    1/2 lb. ground veal
    2 eggs, beaten
    1 c. bread crumbs (preferably sourdough)
    3 tsp. garlic
    2 Tbsp. butter
    1 large red or green bell pepper
Preparation
    Heat oil in heavy large skillet over medium heat.
    Add next 9 ingredients and saute until onion is translucent, about 7 minutes. Transfer to large bowl.
    Mix in all remaining ingredients except butter and pepper.
    Spoon mixture into loaf pan, patting top to even.
    Bake 1 hour.
    Pour off accumulated juices on top and bake an additional 15 minutes until brown.
    Meanwhile, melt butter in small heavy skillet over medium heat.
    Add bell pepper and saute until tender.
    Unmold meat loaf.
    Sprinkle with bell pepper.
    Cut into slices and serve.
