Oven-Fried Fish - cooking recipe

Ingredients
    3/4 c. corn flake crumbs
    1/4 c. grated Parmesan cheese
    1/2 tsp. ground red pepper
    1/4 tsp. salt
    1/4 tsp. black pepper
    1 1/2 lb. fish fillets
    2 eggs, lightly beaten
Preparation
    Preheat the oven to 500\u00b0. Combine first 5 ingredients in a shallow dish. Stir well. Dip fish in eggs and dredge in crumb mixture. Place fish on a baking sheet coated with vegetable cooking spray. Bake at 500\u00b0 for 8 minutes or until fish flakes easily when tested with a fork. Makes 4 servings.
