Ingredients

6 slices bacon, crumbled
1/4 c. bacon drippings
1/4 c. onion, chopped
1 Tbsp. green pepper, chopped
2 c. sliced fresh tomatoes or 1 can tomato wedges
1 medium eggplant, cubed
1/4 tsp. garlic salt
1 tsp. seasoned salt
1/4 tsp. pepper
1/2 c. sharp cheese
1/3 c. bread crumbs
Preparation

Fry bacon until crisp.
Drain.
Add onion, pepper, eggplant, tomato and seasonings to bacon fat.
Cook until tender.
Fold in cheese.
Place in baking dish.
Top with bread crumbs and bacon. Brown under broiler for 4 to 6 minutes.
