Ingredients

3 eggs
1/4 lb. butter (not oleo)
1/4 c. buttermilk (or 1/4 c. milk with 1 Tbsp. vinegar or lemon juice)
1 1/4 c. sugar
1 1/2 c. coconut
Preparation

Beat eggs until foamy.
Add to softened butter and coconut. Add buttermilk.
Stir well, then add sugar and vanilla.
Mix well and pour into 2 (9-inch) unbaked pie shells.
Bake at 350\u00b0 until toothpick comes out clean.
