Picnic Rice Salad - cooking recipe

Ingredients
    3 c. cooked rice, cooled
    2 hard cooked eggs
    1/2 c. chopped celery
    1/3 c. chopped green pepper
    1/4 c. chopped onion
    1 jar (2 oz.) diced pimentos, drained
    1/4 c. dill pickle relish
    1/3 c. mayonnaise
    1/3 c. sweet pickle relish
    1/4 c. French salad dressing
    1 tsp. salt
    1/4 tsp. pepper
    Leaf lettuce
Preparation
    In a large bowl, combine the first seven ingredients. In a small bowl, combine the Miracle Whip, sweet pickle relish, salad dressing, salt and pepper. Fold into rice mixture. Serve in a lettuce lined bowl. Refrigerate leftovers. Yield: 4-6 servings. I do not put mine in a lettuce lined bowl.
