Cheese Stuffed Chicken - cooking recipe

Ingredients
    4 boned skinless chicken breasts
    4 (3 x 1 1/8 inch) slices skim Mozzarella cheese
    1 egg white
    2 Tbsp. all-purpose flour
    1 Tbsp. grated Parmesan cheese
    1/4 tsp. paprika
    nonstick spray
    1 tsp. parsley
Preparation
    Rinse and pat dry chicken.
    Use a sharp knife; cut small pocket in side of each breast.
    Insert cheese slice in pocket.
    In a small bowl beat egg white slightly.
    In another bowl stir together flour, Parmesan cheese, parsley and paprika.
    Dip chicken in egg, then coat with flour mixture.
    Spray 10 x 6 x 2-inch baking pan or dish.
    Arrange chicken in dish and bake in a 375\u00b0 oven 20 to 25 minutes, until chicken is tender and not pink.
