Amy'S Chicken-Rice Casserole - cooking recipe

Ingredients
    1 large or 2 small pkg. Uncle Ben's wild rice (original)
    1 chicken, boiled, deboned and cut up or 1 turkey breast, baked
    1 large bag frozen Frenched beans, cooked al dente and lightly salted
    2 cans sliced water chestnuts, drained
    1 jar cut up pimento
    2 cans cream of chicken or substitute 1 can lower salt mushroom soup
    1 c. lo-fat mayonnaise
Preparation
    Prepare rice as directed.
    In large (3-quart) casserole, layer as listed through pimentos.
    (Amy is from New Mexico and adds 1 can green chili peppers, too.)
    May be made ahead this far (up to one day).
