Ingredients

1 c. pancake mix
1 c. milk
2 eggs, beaten
1 tsp. salt
1 tsp. grated onion
2 Tbsp. melted butter
2 c. grated raw potatoes
Preparation

Mix pancake mix, salt, milk and beaten eggs.
Stir slightly. Fold in potatoes, onion and butter.
Pour 1/4 cup batter for each pancake on a hot, lightly oiled griddle.
Bake to a golden brown, turning only once.
Serve with hot applesauce.
