Sweet Potato-Cashew Bake - cooking recipe

6 medium sweet potatoes (2 lb.)
1/2 c. packed brown sugar
1/3 c. broken cashews
1/4 tsp. ground ginger
1 (8 3/4 oz.) can peaches, sliced
3 Tbsp. butter
1/2 tsp. salt
Preparation

Prepare and cook sweet potatoes (whole).
Combine brown sugar, cashews, ginger and 1/2 teaspoon salt.
Drain peaches well.
In a 10 x 6 x 2-inch baking dish, layer half each of sweet potatoes, peaches and brown sugar mixture.
Repeat layers.
Dot with butter. Bake, covered, in 350\u00b0 oven for 30 minutes.
Uncover, bake another 10 minutes.
Top with brown sugar mixture after baking. Serves 6.
