Pastiera Pasqua(Easter Pudding) - cooking recipe

Ingredients
    3 eggs, slightly beaten
    1/4 tsp. salt
    1/3 c. sugar
    1/2 tsp. vanilla
    dash of nutmeg
    dash of cinnamon
    2 c. instant rice, cooked
    1 c. candied pineapple or grapefruit
    1 c. nuts
    1 c. raisins
Preparation
    Combine eggs, salt and sugar.
    Add milk.
    Stir slowly and constantly.
    Add vanilla, cinnamon and nutmeg.
    Mix and add the rice to custard.
    Pour into pastry lined casserole.
