Flaming Strawberry Omelet - cooking recipe
Ingredients

4 eggs, separated
1/4 tsp. salt
1 Tbsp. sugar
4 Tbsp. rum
1 Tbsp. butter
2 c. sliced, sweetened strawberries
Preparation

Beat the egg yolks with salt in a mixing bowl until light. Add the sugar and 1 tablespoon of rum and mix well.
Beat the egg whites until stiff and fold into the yolk mixture.
Melt the butter in a chafing dish.
Pour egg mixture into pan and cook over medium heat, pulling egg mixture from sides to middle until set. Fold in half and sprinkle with additional sugar.
Ignite remaining rum in a ladle and pour over omelet slowly.
Serve flaming with strawberries.
Yields 4 servings.
