Potatoes Au Gratin - cooking recipe

Ingredients
    3 1/2 c. peeled, finely chopped potatoes
    1/2 c. low-fat cottage cheese
    1/2 c. nonfat buttermilk
    1 Tbsp. chopped fresh or frozen chives
    2 tsp. cornstarch
    1/2 tsp. salt
    1/8 tsp. pepper
    vegetable cooking spray
    1/4 c. shredded part-skim Mozzarella cheese (1 oz.)
    1/8 tsp. paprika
Preparation
    Cook potatoes in boiling water to cover, 8 minutes or until tender (do not overcook).
    Drain and set aside.
    Combine cottage cheese and buttermilk in container of an electric blender or food processor; process until smooth.
    Transfer to a large bowl; stir in potatoes, chives and next 3 ingredients.
    Spoon into a 1-quart casserole coated with cooking spray.
    Bake at 350\u00b0 for 20 minutes; sprinkle with cheese and paprika and bake an additional 5 minutes. Yield:
    6 servings.
