Batter-Fried Chicken - cooking recipe

Ingredients
    1 (2 to 2 1/2 lb.) broiler-fryer chicken, cut up
    1 c. pancake mix
    1/2 tsp. salt
    3/4 c. water
    cooking oil
Preparation
    In a covered saucepan, simmer chicken in salted water to cover for 20 minutes; drain.
    In a bowl, combine pancake mix and salt; stir in water.
    Beat 2 minutes.
    Dip chicken in batter; let excess batter drain off into bowl.
    In a heavy skillet that's at least 3 inches deep, heat 1 1/4 inches of oil to 350\u00b0.
    Regulate heat so chicken fries, about 325\u00b0.
    Fry a few pieces at a time for about 5 minutes or until golden and chicken is tender.
    Drain well.
    Makes 4 servings.
