Eggplant Stir-Fry - cooking recipe
Ingredients

1 large eggplant
4 tomatoes
1 bell pepper
1 small can tomato sauce
1/2 can water
garlic salt
olive oil
Preparation

Peel and cut up eggplant.
Fry in olive oil.
Add cut up tomatoes and bell pepper.
Add tomato sauce and water with garlic salt to taste.
Works best in wok.
Cover and simmer 20 to 25 minutes.
