Cucumber And Onion Potato Salad - cooking recipe

Ingredients
    2 lb. potatoes
    1 medium onion, thinly sliced
    1 large cucumber, grated
    1/3 c. oil
    1/4 c. vinegar
    salt and pepper to taste
Preparation
    Cook unpeeled potatoes in boiling water to cover in large saucepan until tender.
    Cool, peel and slice.
    Combine with onion and cucumber in bowl.
    Add oil, vinegar, salt and pepper; toss lightly to mix.
    Chill until serving time.
    Yield:
    8 servings.
