Easy Harvest Helper - cooking recipe

Ingredients
    1 c. Italian dressing
    8 medium zucchini (about 2 1/2 lb.), cut into thin strips
    4 c. coarsely chopped tomatoes
    4 c. cauliflowerets
    2 c. thin diagonally sliced celery
    1/4 tsp. crushed red pepper (optional)
    grated Parmesan cheese
Preparation
    In a large Dutch oven, combine all ingredients except cheese. Simmer, covered, stirring occasionally, 20 minutes or until vegetables are tender.
    Serve with cheese.
    Makes about 10 cups vegetables.
