Sweet Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 tsp. salt
    1 tsp. baking soda
    3 tsp. vanilla
    1 c. chopped pecans
    1 c. oil (Crisco)
    2 c. sugar
    2 c. grated zucchini (wash and do not peel)
    3 c. plain flour
    1/2 tsp. baking powder
    3 tsp. cinnamon
Preparation
    Beat eggs until light.
    Cream with sugar, oil and vanilla. Mix and sift all dry ingredients; add to sugar mixture.
    Beat. Add zucchini and nuts; mix.
    Pour into two loaf pans that have been greased and floured.
    Bake at 325\u00b0 for 1 hour and 20 minutes. Let cool for 5 minutes on wire rack and dump from pans.
    Mmmm, good.
