Apricot Banana Nut Bread - cooking recipe

Ingredients
    2/3 c. shortening
    1 c. sugar
    2 eggs
    4 to 5 medium ripe bananas
    1/2 c. dried apricots, chopped and dredged in small amount of flour
    1/2 c. coarsely chopped nuts
    1 Tbsp. lemon juice
    1 3/4 c. flour
    1 tsp. baking soda
    1 tsp. salt
Preparation
    Cream shortening and sugar in a large mixer bowl.
    Beat in eggs, one at a time.
    Blend in lemon juice.
    Mash bananas with fork; mix in.
    Add dry ingredients; blend.
    Stir in nuts and apricots.
    Pour batter into a 9 x 5-inch loaf pan, well-greased. Bake at 325\u00b0 for 70 to 80 minutes, or until loaf tests done. Makes 1 loaf.
