Potato Salad - cooking recipe
Ingredients

4 c. diced, cooked potatoes
1 tsp. salt
1/4 tsp. pepper
1 medium onion
1/2 c. celery, chopped
1/2 c. chopped sweet pickles
4 hard-boiled eggs, diced
1/4 c. pickle juice
1 Tbsp. prepared mustard
1 c. mayonnaise
herb salad blend seasonings
Preparation

Combine first 7 ingredients.
Blend pickle juice and mustard with mayonnaise.
Add to potatoes and mix well.
Add spices. Cover salad and refrigerate overnight.
Before serving, tuck lettuce around edge and garnish with tomatoes or radishes.
Serves 8.
