Mini Cheesecakes(Serves 12) - cooking recipe

Ingredients
    1/2 c. sugar
    1 1/2 Tbsp. cornstarch
    1 (1 lb.) can red tart pitted cherries
    red food coloring (optional)
    3/4 c. cookie crumbs (chocolate, gingersnap, etc.)
    1 (8 oz.) pkg. cream cheese, softened
    1/3 c. sugar
    1 egg
    2 tsp. lemon juice
    1/2 tsp. vanilla
Preparation
    Combine 1/2 cup sugar and cornstarch in saucepan.
    Stir in cherries and juice.
    Cook, stirring constantly, until mixture boils and thickens.
    (Add red food coloring.) Cool.
