"Grandma'S" Carrot Cookies - cooking recipe

Ingredients
    2 c. diced, peeled carrots
    3/4 c. butter or margarine
    1 c. sugar
    1 egg
    1 tsp. vanilla
    2 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 c. nuts (optional)
    orange frosting
Preparation
    Cook carrots in small amount of boiling, salted water until tender; drain and mash.
    Cool.
    Cream butter and sugar.
    Add egg and vanilla; beat until fluffy.
    Stir in mashed carrots.
    Stir together flour, baking powder and salt; blend into batter.
    Drop from teaspoon on ungreased cookie sheet.
    Bake at 375\u00b0 about 12 minutes.
    Cool; ice.
