Fruited Chicken Macaroni Salad - cooking recipe
Ingredients

2 c. cubed, cooked chicken (1 1/4 lb. chicken breasts)
1 Tbsp. minced onion
1 tsp. salt
1 1/2 c. macaroni
1 c. celery, diced
1/2 c. seedless grapes, halved
13 1/4 oz. pineapple tidbits
3/4 c. slivered almonds
1/2 c. mayonnaise
1/2 c. sour cream
2 Tbsp. lemon juice
2 cantaloupes
lettuce
Preparation

Combine chicken, onion and salt.
Cook macaroni; rinse and chill.
Add celery, fruit and nuts to chicken.
Stir in macaroni. Mix mayonnaise, sour cream and lemon juice (these may need to be increased).
Halve or cut up cantaloupe.
Serve salad in or over cantaloupe; use lettuce for a bed.
