Apricot Pork Chops - cooking recipe
Ingredients

6 medium thick pork chops
1 medium onion, finely chopped
1 medium can apricot halves
2 Tbsp. soy sauce
1 small green pepper, thinly sliced
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. flour
Preparation

Trim excess fat from chops and set aside.
Into a paper bag, put flour, salt, pepper and chops.
Shake bag firmly to coat chops.
Place trimmed fat in frying pan and saute briefly. Remove.
Brown chops in fat remaining in pan, then add apricots, onions and soy sauce.
Simmer, covered, for 1/2 hour.
Uncover. Simmer 15 minutes.
Add green pepper.
Simmer 15 more minutes.
