Beet Jam - cooking recipe

Ingredients
    5 lb. beets, peeled and finely ground
    4 lb. sugar
    3 oz. ginger root, peeled and finely minced
    4 lemons, juice and grated rind
    1 lb. almonds
Preparation
    Put the beets into a large stainless steel pan and barely cover with water.
    Bring to boil over high
    heat.
    Lower heat and add sugar, lemon juice, grated rind and minced ginger root.
    When beets are tender, cook over low heat, stirring frequently until mixture is thick and clear.
    Remove from heat and stir in nuts. Pour into sterilized jars and seal.
    (I've kept it up to 4 years since a little goes a long way.)
