Chicken Cacciatore - cooking recipe

Ingredients
    1 chicken, cut up
    1/4 c. olive oil
    1/2 c. red wine vinegar
    1/2 c. sweet vermouth
    1 Tbsp. dry basil
    2 bay leaves
    1/2 to 1 tsp. hot pepper
    1/2 c. water (if needed)
    2 to 3 Tbsp. paprika
    salt to taste
    1 to 2 cloves crushed garlic
    sliced mushrooms (optional, add last 10 minutes)
Preparation
    Remove skin from chicken; cut up into equal portions for cooking uniformly (breast can be cut into 4 pieces).
    Brown chicken in oil and garlic.
    Combine rest of ingredients and pour over chicken.
    Cover and let simmer for approximately 1 hour, basting every 15 minutes.
    Remove bay leaf before serving.
    Serve with spaghetti with oil and garlic sprinkled with Romano cheese.
