Warm Vegetable Salad With Mustard Dressing - cooking recipe

Ingredients
    red leaf, endive, romaine, Boston or bibb lettuce (3 c.), torn into bite-size pieces
    1/2 large red pepper
    1/2 large yellow pepper
    1 to 2 celery ribs
    2 carrots
    1 leek
    1/2 lb. fresh mushrooms
    2 shallots
    salt and pepper to taste
    2 Tbsp. unsalted butter
    2 Tbsp. heavy cream
    1 Tbsp. grainy mustard
    1 tsp. Dijon mustard
    1 Tbsp. plus 2 tsp. sherry wine vinegar
    1 Tbsp. water
    1/4 c. salad oil
Preparation
    Dressing:
    Combine mustard, vinegar, water, salt and pepper in a small bowl.
    Whisk in oil.
    Set aside.
