Kibbi Bis Sayniyyi(Baked Kibbi) - cooking recipe

Ingredients
    3 1/2 c. burghul (any middle Eastern market carries this)
    1 large onion, grated
    2 tsp. salt
    1/2 tsp. pepper
    1/8 tsp. cinnamon
    1/2 tsp. allspice
    2 lb. ground lean lamb
Preparation
    Cover burghul with cold water; soak for 10 minutes.
    Drain and press between palms of hand to remove excess water.
    Mix onion and spices together with fingers.
    Knead meat and spices thoroughly; add crushed wheat and continue kneading.
    Dip hands in ice and water while kneading in order to soften kibbi.
    Run the kneaded mixture through a meat grinder two to three times.
