Sweet And Sour Pork - cooking recipe

Ingredients
    1 (8 oz.) can pineapple chunks (juice pack)
    1 lb. lean boneless pork
    2 Tbsp. cornstarch
    1 c. chicken broth
    1/4 c. red wine vinegar
    2 Tbsp. brown sugar
    2 Tbsp. low sodium soy sauce
    1 Tbsp. peanut oil
    1 clove garlic, minced
    1 medium onion, chopped
    1 large green bell pepper, cut into 1-inch pieces
    1/2 c. diced celery
    1 medium carrot, very thinly bias sliced
    3 c. boiled rice
Preparation
    Drain pineapple chunks, reserving 1/3 cup juice.
    Set pineapple chunks and juice aside.
    Cut pork into 1/2-inch cubes. Set aside.
    Combine reserved pineapple juice and cornstarch; stir in chicken broth, red wine vinegar, brown sugar and soy sauce; set aside.
