Corned Beef Or Venison - cooking recipe

Ingredients
    5 to 6 lb. roast (beef or venison)
    1/4 tsp. saltpeter, dissolved in 1/4 c. warm water
    2 Tbsp. sugar
    2 cloves minced garlic
    2 tsp. paprika
    1 Tbsp. pickling spice
    3/4 c. salt
    2 qt. water
Preparation
    Combine last 6 ingredients and then add saltpeter mixture.
    Put meat in container (crock or slow cooker).
    Pour marinade over meat. Weight down with plate.
    Leave for 3 weeks.
    Turn occasionally.
    If meat is bloody, rinse and then cook as a regular roast.
    Serve warm or cold.
