Uncle Jim'S Polenta And Cheese - cooking recipe

Ingredients
    2 qt. water
    2 c. cornmeal
    1 Tbsp. salt
    2 c. diced cheese (such as Muenster, Swiss or Cheddar)
    ground pepper
    1/2 c. butter, melted
    1/2 c. grated Parmesan cheese
Preparation
    Bring water and salt to boiling point in a deep pan.
    Slowly add cornmeal to boiling water, stirring with a wooden spoon to prevent lumping.
    Cook over low heat for about 10 minutes.
    Stir in cheese.
    Cook 20 more minutes, stirring frequently.
    The mixture should be on the soft side.
    Add a little pepper.
    Stir in the butter.
    Turn out onto serving platter; sprinkle with Parmesan cheese and serve with your favorite sauce.
    Good with sausage.
