Squash Crouquettes - cooking recipe

Ingredients
    4 or 5 yellow squash, cut up
    1 small onion, cut up
    salt to taste
    1 egg, beaten
    2 Tbsp. butter
    1/4 c. grated cheese
    1 c. cracker crumbs
Preparation
    Cook squash and onion in small amount of salted water.
    Drain and mash.
    Add egg, butter, cheese and 1/2 cup cracker crumbs. Mix well.
    Shape into balls and roll in remaining crumbs.
    Fry in deep fat until golden brown.
