Zoie'S Favorite Eggplant - cooking recipe

Ingredients
    2 to 3 large eggplants
    6 c. shredded Mozzarella
    8 c. spaghetti sauce
    garlic salt
    olive oil
    Italian spice blend
Preparation
    Slice eggplant in 1/4-inch pieces. Lay flat to cover the bottom of a roasting pan. Drizzle with olive oil and garlic salt. Roast in a 475\u00b0 oven until eggplant begins to appear translucent (about 5 to 10 minutes).
