Cheesy Potato Soup - cooking recipe
Ingredients

6 medium potatoes
2 ribs celery
salt and pepper to taste
1 qt. milk
2 Tbsp. flour
1 onion
1 qt. chicken broth
3 Tbsp. margarine
1/3 lb. Velveeta, cut in small pieces
Preparation

Dice potatoes, onion and celery fine and place in large pan. Cover with chicken broth.
Bring to a boil.
Turn down heat; cook until vegetables are tender.
Remove from heat; mash vegetables slightly.
Melt butter; add flour and blend well.
Add milk and bring to boil.
Cook until slightly thickened.
Place vegetables back on heat; add thickened milk.
Blend well; add cheese.
Cook until slightly thickened.
If too thick, add more milk.
Simmer 10 minutes.
